Turkey Cheeseburgers with Homemade Bread Rolls

Double Cheeseburger on Bread Rolls & Sweet Potato Wedges

This is a great healthier dinner.  It definitely is not the healthiest thing, but far better than take-out or a standard all-beef burger.  If you wish to make this a much healthier dinner, you could omit the cheese and rolls and use low-calorie sliced bread or lettuce wraps.  However, the rolls are the best part of this, in my opinion.

18 WW points as pictured (2020) If you replace the rolls with lettuce wraps and use spray instead of oil for the potatoes, this cuts the points down to 5!


 

Bread Rolls



This recipe is great for burgers, but also flexible enough to be used for an all-purpose dinner roll (portion into 1 oz rolls instead).  I imagine if left in one piece and baked in a loaf pan, it would make a perfect sliced sandwich loaf. Unfortunately, this time my rolls had too much water and did not hold their shape properly.  The result was a flatter roll, which was still delicious and the texture was fine. If you remember (unlike me) to add the water a little at a time, the rolls should come out perfectly, almost completely round.  My recipe is portioned by weight. I do not have the volume measurements and have never made it any other way. Scales are very useful in a kitchen and I highly recommend using one, at least for baking.

9 WW points each (2020)


Ingredients

545 g All Purpose Flour

40 g Sugar

5 g Salt

14 g Yeast

50 g Butter

140 g Half & Half

140 g Water

1 ea Eggs, stirred for egg wash (optional)


1. Mix all dry together.

2. Cut in the butter until it resembles wet sand or cornmeal.

3. Gradually add in the liquids.  Start with the half & half and mix in a stand mixer with the dough hook attachment.  Continue adding water a splash at a time until the dough just starts to pull away from the sides of the bowl.  It should gather around the hook. It is much easier to add liquid to a dry-dough than it is to add flour to a wet-dough.

4. Divide the dough into 4 oz portions.  It should make about 10 rolls. Roll them into a round shape and set on sheet pans.

5. Let the dough rise until about double.  This should take about 1-2 hours in a warm area.

6. Brush with egg wash, if desired, and bake at 350 degrees until golden brown,  about 25 minutes. Inside should be 200 degrees fahrenheit.


 

Sweet Potato Wedges



This is a super simple recipe.  You can definitely make this your own by using a homemade spice mixture.  Another thing that I would play around with if I were to make them again would be to pre-bake the wedges at 350 degrees until just starting to soften.  Then chill and when ready to prepare dinner, put them back in at 450 degrees to finish them. This should mimic double-frying and give you a decently crispy crust and soft insides.

4 WW points total, if using 1 TB olive oil to coat (2020)


Ingredients

4 ea. Medium Sweet Potatoes


1. Preheat oven to 400 degrees.

2. Cut the potatoes into wedges.  They should be about as thick as your finger or thumb.

3. Toss the potato wedges in a bowl with a little oil, salt, and pepper to taste.

4. Arrange on a baking sheet lined with parchment paper.  Wedges should not overlap.

5. Bake until cooked through and soft enough to squeeze a dent into them, about 20 minutes.


 

Turkey Cheese Burgers & Caramelized Onions



I made these into doubles.  I only put cheese on half the patties (had to make it reasonably healthy), then stacked a patty on top of those.  The second patties were topped with the caramelized onions. The cheese melted perfectly after being sandwiched between the patties.  If you want to play around with flavoring the patties beyond the listed ingredients, try mixing worcestershire sauce into the raw meat.

2 WW points each, if using cheese. (2020)


Ingredients

1 med. Onion, julienned

1 lbs. Ground Turkey

TT Yellow Mustard

As Needed Sliced Cheese (I used Trader Joe's Sliced Lite Cheddar Cheese)


1. Warm some oil in a pan over medium heat.  Add the onions and season with salt and pepper.  Let the onions slow cook until wilted and lightly caramelized, about 20 minutes.

2. While the onions cook, portion the turkey into patties (I made 6 thin patties, about 2.5 oz each.)  Season if desired, and then brush each side with yellow mustard.

3. Warm a pan over medium high heat.  When the pan is heated, begin cooking the patties.  Do not crowd the pan.

4. Flip the patties once they appear cooked about halfway through.  Place a slice of cheese on however many you like.

5. When the onions are done, add some to the tops of the burgers.

6. Repeat with any remaining patties that need to be cooked.

7. Build your burger on the Homemade Onion Rolls and top with anything you like!
