Every good soup needs some bread to go along with it. These savory muffins are a great alternative to rolls. They are filling and healthy and soak up broth perfectly. This recipe used the flapjack and waffle mix, which has a little bit of sugar. The muffins come out slightly sweet and would be great with a touch of honey (or butter for an indulgent alternative). I am pretty sure any of the Kodiak mixes would work for this recipe, although I've only used the flapjack and waffle mix for this recipe. If you do not have Kodiak mix, you can substitute it with regular flour. In this case, increase the baking powder to one tablespoon. Lastly, these muffins would be great with other additions. I would suggest experimenting with Italian seasoning, nutritional yeast, cheese, jalapeño, or honey.
This entire recipe is 25 WW points, or 2 WW points per muffin. If you use flour instead of Kodiak, the points increase slightly to 31 WW points for the recipe, or 2.5 WW points per muffin (2 for one muffin, 5 for two muffins. These points are the same for the purple plan as well.
Ingredients
2 cups Kodiak Powercakes Buttermilk Flapjack and Waffle mix
2 tsp baking powder
2 TB sugar
¾ cup water
1 large egg
1. Preheat to 400 degrees. Combine the Kodiak mix, baking powder, and sugar in a mixing bowl.
2. Whisk the water and egg in a separate bowl. Add the dry to the wet and fold until just combined.
3. Evenly portion the batter into greased muffin tins. It may not look like much batter in each cup, but the muffins will rise significantly.
4. Bake 10 minutes, until a toothpick comes out clean.
