Dips are my absolute favorite appetizer. Most of the time when you buy them in store, they're loaded with extra seasonings and ingredients that make them very unhealthy. I created this recipe to satisfy the craving for dips and make it super healthy. The nutritional yeast gives the dip a nice cheesy flavor, but you could definitely use actual cheese instead. I like the dried onion flavor in this better than fresh because it adds enough flavor without overpowering. Real onions would be good as well, but they will have a bigger affect on the flavor of the dip.
I didn't bother figuring out a serving size for this because the entire recipe (about 4 cups) is only 1 WW point! If you omit the nutritional yeast, this dip would be completely free.
Ingredients
2 cans 15 oz black beans, drained
2 TB dried onions
2 tsp garlic powder
1 tsp cumin
TT salt
As needed water
2 TB greek yogurt
Dash hot sauce (I used Tapatio)
2 TB nutritional yeast
1. Combine the beans, onions, garlic powder, cumin, and salt in a small sauce pot. Add water to the beans until only the tops are uncovered.
2. Bring to a boil and then simmer until the beans are very soft and falling apart and the liquid has thickened and is bubbling.
3. Puree the beans in a food processor until smooth. Add the yogurt, hot sauce, and yeast and pulse a few more times until everything is incorporated.
4. Taste and adjust the seasonings as you like. The flavor will only get more intense as the dip cools and the ingredients have a chance to marry.
